
Yabuizu Souhonten is a soba restaurant, located near Showa street and a 5 minutes walk from Nihonbashi station.
It's gated restaurant brings the charm of Edo atmosphere.
During the Edo period, the people of the city seeking a simple but refined dish, enjoyed eating soba noodles.
Soba is healthy and popular.
We want to convey the culture of "soba", beloved by the people of Edo, as it was in the past.
Respecting tradition and staying true to "the original form of soba", we want to continue to protect traditional.

The soba that can be savored in our shop is made from 
                  homemade flour, ground
                  twice a day (every morning and afternoon), 
                  in the stone grinding hut by the shop, 
                  paying special 
                  attention to the aroma of freshly ground flour and being rich in 
                  sweetness.
                  The stock is made from 6 different types of mackerel and bonito 
                  flakes, blended to
                  our own formula.
                  Every morning, water is boiled in a cauldron, the mackerel and 
                  bonito flakes are
                  added, and the broth is carefully filtered. 
                  Our stock is ready once this liquid is repeatedly sieved.
                  Faithfully following the old saying of "Stock should bubble 
                  loudly", the flakes of
                  mackerel and bonito dancing in the pot 
                bring a appetizing flavor and aroma.


 
 


 
 
                 
 
 
 We have many simple but unique side dishes to accompany alcohol, such as our "tama-
              goyaki", an omelette made with our special stock, and "soba miso", a thoroughly
              fermented miso paste with buckwheat seeds.
              Edo people considered it very cultured to enjoy these snacks and drink sake chosen 
              by the shop owner while waiting for the main soba dish.
              It's respectful to heartily and vigorously slurp up the soba, thoroughly enjoy the 
            atmosphere of the shop, and quietly leave the premises.

The first floor has table seating and is mainly for small groups. 
                      From lunch to evening meals, it's possible to leisurely enjoy
                      soba, drink sake and unwind.
                     
 
The second floor has table seating as well as one room with a
                            horigotatsu table
                            (which is low to the ground and has a recessed
                          floor beneath it). 
                           
                        
                               
                            
The third floor has four private rooms.
                                Depending on the number of people, the partitions between the
                                rooms can be 
                                removed.
                                From private room to reception room, if all partitions are
                                removed, accommodate up to 40 people.
